This pale, aromatic, Belgian-style wheat beer is light and refreshing.
It’s brewed with organic whole spelt grains, as well as organic wheat, oats and floor-malted barley, followed by two additions of organic whole leaf Rakau hops for balance and bitterness.
We added foraged woodruff at the end of the hop boil to impart the plant’s characteristic almond, nutty, hay-like sweetness to the beer.
It’s a little nod to the Berliner tradition of additing green woodruff syrup to wheat beers. Traditionally the Berlin beers would have been soured and the syrup was a way to sweeten them in the bar when they were served.
Our spelt beer is not sour, but we’ve used the aromatic flavour of the woodruff to create something reminiscent of these traditional beers.
